Cottage Cheese Crumb Cake

- 1.5 Cups Brown sugar
- 1/2 Cup Butter
- 2 Cups Flour
- 1 Egg
- 3/4 Cup Cottage Cheese
- 1/2 Cup Milk
- 1 Tsp Baking Soda
- 1 Tsp Vanilla or flavor of choice, original recipe called for Black Walnut
Preheat oven to 350ยบ
Mix brown sugar, butter, and flour together to form a crumb (sand like texture). Save 3/4 cup for top of cake.Add egg, cottage cheese, milk, and baking soda to crumb mixture. Beat on high speed until smooth. Add vanilla and mix.Place in a 7.5 x 11 greased pan. Add topping mixture and bake for 35 minutes.
